Egg and Potato Burrito

The Spanish word Burrito means “little donkey”. The name was derived due to its shape that resembled the ear of the donkey. Burrito also called Taco de Harina is a Mexican delicacy comprising of tortilla(made of flour) which is steamed or baked. The fillings used for the tortilla is basically Mexican rice, meat or beans. However with the popularity of Mexican cuisine in the United States, the fillings have increased,adding on to the original filling. The filling consists of lettuce, salsa, avacado, cheese and sour cream too.

Although these are the common Burrito filling. Let us show you how you can make Egg and Potato Burrito

Egg and Potato Burrito

What you need:

* Eggs,2 (Use only the white of the second egg)
* 1 Soft and Fat Free Taco size Flour Tortilla
* Pimiento,1 Tbsp
* Skimmed Milk,1 Tbsp
* Diced Potatoes,3/4 cup
* Chopped Onion,1/4 cup
* Shredded Sharp Cheddar Cheese,2 Tbsp

How to make:

1. Gently mix 1 egg white and 1 egg with pimiento and skimmed milk.
2. Take a non stick pan with a coat of cooking spray and saute onion and potato over medium heat until it becomes soft.
3. Add the egg mixture.Cook and stir until firm
4. Sprinkle Salt and Pepper with Cheddar Cheese.
5. Spoon the mixture on to the tortilla.Roll and serve.
