Camarones Rancheros

So all you need is:
1 teaspoon of Mexican oregano
1 teaspoon of whole cumin seed
1 teaspoon of crushed black pepper
1 teaspoon of anise seed
2 tablespoons of vegetable oil
1 garlic, clove, minced
1 - 2 jalapeño chiles, finely chopped
2 scallions, finely chopped
1 large tomato, diced
1 lb. peeled medium shrimp
1/4 cup chopped fresh cilantro
1 teaspoon salt, or to taste


How to make:

Start with toasting the anise seed along with cumin seed on dry and
hot large sauté pan, keep shaking the pan continuously.
Make it fragrant. Then keep aside, put vegetable oil until rippling
over high heat.
Then add garlic and scallions and cook it for one min , then its time
to add cilantro,tomato and chile.
Now stir well, then add oregano, anise seed and cumin, cook for 2 min.
Then shrimp and cook it for approximately 1 1/2 minutes on each side
or make it pink.
Put seasoning.
Then serve with lime wedges.

Anise Seed Borrachio Cookies

They are simply delicious and really going to be your favourite when you eat it for the very first time, yes they are very yummy Anise Seed Borrachio Cookies, these cookies are really classic, they have sugar and are blended with tangy flavours of anise , vanilla and rum. To make these all you need:

Anise Seed Borrachio Cookies

1/2 teaspoon of salt
2 tablespoons anise seed
1 1/4 cups of butter
3 tablespoons of rum
2 1/2 cups of all-purpose flour
1 1/2 teaspoons of vanilla extract
1 teaspoon of baking powder
3/4 cup of white sugar
1 egg
1 1/2 teaspoons of ground cloves

How to make:
Take a small bowl put anise seeds with rum, keep aside to marinate overnight.. Now take a medium size bowl, make a cream of vanilla ,sugar and butter make it smooth, add anise seed and rum, with egg . Then combine baking powder ,salt and flour with cloves add butter mixture and blend it well,make it chilled in refrigerator for 1 hour. Now Preheat the oven to 350 degrees F , make and roll the dough of 1/8 inch thickness.
Make desired shapes by using cookie cutters,then place the cookies on a cookie sheet that is greased.
Bake it for ten minutes,till the edges become golden brown.
Cool them on baking sheets.

Ancho Vegetable Stew

Very yummy and delicious to make your day this recipe is just right in
front of you. It is Ancho Vegetable Stew that has come directly from
the mexican kitchen to give you a special and different flavour it is
made up of vegetables , it is served with four tortillas so be ready
to avail new taste.
To make this all you need:

1 cup of simmering water
1 large yellow onion, diced
1 Tbsp. of canola oil
2 Tbsp.of Terra Sol Ancho Chile Paste
1 medium zucchini, diced
1 red bell pepper, seeded & diced
1 14 oz. of can of stewed tomatoes, undrained
2 large cloves of garlic, minced
4 cups of water
One 11 oz. can of corn kernels, drained
1 large potato, peeled & diced
1 1/2 tsp. of ground cumin
2 tsp.of dried oregano
1/4 cup tomato paste
1 tsp. salt



How to make:
Take a large saucepan, make the oil heat over medium heat, now add
onion, garlic , bell pepper and zucchini and cook it properly for 6
min. Make it tender
Add rest of the ingredients but leave tomato paste as well as ancho paste.
Now bring it to simmer. Then make the heat medium-low.
Let the potatoes tender for about 20 min, then add ancho paste and tomato paste.
Cook it for five minutes.
Let the stew stand for 5-10 minutes before serving.
Put it into bowls and serve with flour tortillas.

Grilled Mojo Chicken & Pineapple

To have this delightful :Grilled Mojo Chicken and Pineapple all you need to gather is:

Grilled Mojo Chicken & Pineapple
1/2 cup of Mojo Criollo Marinade
4 boneless, skinless chicken breast halves
5 3/4-in.-thick slices fresh pineapple
1 Tbsp of oil

Procedure:

Start with chopping the pine apple1 slice , blend it with marinade until smooth, then remove and reserve 2 Tbsp. Put rest of the mixture into a large ziptop bag.
Now add chicken, let it be coat. Refrigerate it for at least 2 hours. Heat stove top ridged grill pan, then brush pineapple slices and grill with oil. Taker out chicken from bag, then with marinade discard the bag. Now grill the chicken for five minutes ,now Turn chicken then add pineapple to grill. Grill both for three minutes,then Slice chicken. Now sprinkle or drizzle with the reserved 2 Tbsp marinade. If need then garnish with chopped cilantro, Now enjoy!

Mexican Beef Enchiladas

Well everyone wants change in his life and when it comes to flavour then we don't want to do any compromises, here is another flavour that has come to temp you ! yes get ready with a recipe that has directly come from Mexican kitchen its name is Mexican Beef Enchiladas, so try this and add new taste to your daily routine stuff.

Mexican Beef Enchiladas

Al you need is :

For Meat Filling :

1. 1 clove garlic, finely chopped
2. 1 tablespoon vinegar
3. 1 tablespoon chili powder
4. 1 pound ground chuck
5. 2 teaspoons salt
6. 1 tablespoon tequila, cognac or water
7. 1 (1 pound) can kidney beans, undrained


Mexican Beef EnchiladasFor Tomato Sauce :

* 1 tablespoon vinegar
* Dash of pepper
* Dash ground cumin
* 1 clove garlic, very finely chopped
* 2 tablespoons flour
* 1 beef bouillon cube
* 2 tablespoons finely chopped canned green chillies
* 1/2 teaspoon salt
* 3 tablespoons salad oil
* 1/4 cup chopped onion
* 2 (10 1/2 ounce) cans tomato puree
* 1 cup water


For Enchiladas :

* Monterey jack cheese
* 10 corn tortillas
* 1 cup grated sharp Cheddar cheese or 1 cup cubed


Procedure:

Take a medium skillet on low heat saute chuck with 1 clove garlic, 1 tablespoon vinegar,chili powder, 2 teaspoons salt and the tequila, make the Chuck brown, stir in kidney beans.This is the way you prepare meat filling.

Take hot skillet saute garlic and onion make them gold, remove from heat, add flour, tomato puree,bouillon cube dissolved in boiling water and , vinegar,.This is the way you prepare tomato sauce,now boil it on medium heat.

Now add chillies ,pepper,cumin,salt uncovered it and stir for about 5 min. To make Enchiladas, Preheat oven to 350 degrees F, fill the 1/3 filling n center of each tortilla, roll it up.On baking dish 13 x 9 x 1-inch,arrange them seam side down.Add tomato sauce sprinkle with cheese. Bake 25 minutes.

Now make 10 small, 5 large servings. Enjoy!

* 1 container sour cream
* 2 pounds of lean ground beef
* 1 jar taco sauce
* 1 package taco seasoning mix
* 1 package shredded Cheddar cheese
* 1 package cream cheese, softened
* 1 tomato, cubed
* 1 can sliced black olives, drained
* 2 green onions, sliced
* 1 cup shredded lettuce


How to make:

* Start with crumbling ground beef in a deep large skillet, cook it on medium heat.
* Make it evenly brown, mix taco sauce and keep aside.
* Take a large bowl mix sour cream, sour cream and cream cheese.
* Then spread the mixture on a medium serving dish.
* Now with beef mixture, lettuce and Cheddar cheese just make layer the sour cream mixture.
* Make topping with black olives, tomato and green onions.

Sopapilla Cheesecake Pie

Sopapilla Cheesecake

All you need:
1 cup of white sugar
2 (8 ounce) packages of cream cheese, softened
2 cans of refrigerated crescent rolls
1 teaspoon of Mexican vanilla extract
3/4 cup of white sugar
1/2 cup of butter, room temperature
1 teaspoon of ground cinnamon
1/4 cup honey

Procedure:
Start with preheating the oven to 350 degrees F (175 degrees C).
Make a 9x13 inch baking dish along with cooking spray.
Now beat the cream cheese, take 1 cup of sugar along with the vanilla extract make it smooth.
The cans of crescent roll dough would be unroll, make a shape of 9x13 inch rectangles using rolling pins.
Press one piece into the bottom of a 9x13 inch baking dish.
In the baking dish spread the cream cheese mixture evenly, after that cover it with the remaining piece of crescent dough.
No stir butter, 3/4 cup of sugar and cinnamon.
Donot mix it over the top of cheesecake.
Its time to bake the crescent dough and make it golden brown, around 30 min.
No remove from oven and spread honey over it.
Let it cool and make 12 squares.

* 1 can diced tomatoes, undrained
* 1 1/2 teaspoons of salt
* 1 medium onion, thinly sliced
* 1/2 teaspoon of pepper
* 1/2 teaspoon of Italian seasoning
* 1 1/2 cups of uncooked instant rice


Procedure:

Take a large skillet put brown beef drain it, keep the beef aside. Let it warm, in same skillet make it boil, make the heat low. Uncover it let the vegetables get tender, then stir in rice. Remove it from heat, make it stand for 5 min. Add beef then heat.

Just follow these easy steps all you need is:

Albondigas

* 4 carrots should be sliced
* 2 small potatoes properly peeled and diced
* 1 quart water
* 1 medium onion should be diced
* 1 1/2 cups of salsa, medium or hot
* 1 1/2 pounds of ground beef
* 2 beef bouillon cubes
* 1/3 cup of seasoned dry bread crumbs
* chopped fresh cilantro
* 1/3 cup milk


Procedure:
Take a large stock pot add water, potatoes, onion, salsa, carrots along with bouillon cubes let it boil, let it boil for 10 min, make the heat medium and stir occasionally.

Now mix the milk, beef and breadcrumbs all together in a bowl, make 1-inch meatballs and drop into boiling broth.When it boils make heat medium low.

Then cover and cook it for 20 min, make sure the meat balls should be pink from center and the vegetables are tender. For garnishing serve with sprinkled cilantro.

All you need is :

2 roma tomatoes, quartered
1 onion should be chopped and divided
1 can whole tomatoes, should be drained, rinsed and patted dry
1 clove garlic, coarsely chopped
1/2 of jalapeno pepper salt and pepper to taste
1/4 cup of fresh cilantro
4 avocados to be halved with pits removed
12 whole wheat tortillas
2 cups torn romaine lettuce
1 can kidney beans, rinsed and drained

Procedure:
You need to preheat an oven to 350 degrees F.
Mix fresh tomatoes,garlic canned tomatoes, cilantro, 1/2 of the onion along with jalapeno in a food processor, chop it roughly; Dont puree Take a large bowl Combine the pulp of the avocados and the rest of onion, mash it o make smooth, season it with pepper and salt. Spread a single layer of tortillas on baking sheet.Place it in an oven warm it about 5 min, now Spread tortillas with guacamole. Toppings of beans, lettuce and salsa.
