Chicken Mexicana

Chicken Mexicana is a delicious Mexican Recipe. It is made up of Chicken thighs.In Chicken Mexicana, mainly boneless chicken is used. This delicious recipe can be accompanied with cheesy Mexican rice, an avocado salad and refried beans.To make this :

Chicken Mexicana
All you need :

* 4 Tbls butter, melted

* 4 cans Rotel Mexican Festival Tomatoes, juice separated

* 3 lbs Chicken thighs, boneless/skinless

* Salt & Pepper to taste

* 3 cups Mexican blend cheese, grated

* 1 can (2 1/4 oz) sliced black olives

* 3 cups (about 10 oz) nacho cheesy chips, crumbled


For garnishing:Sour cream & cilantro

How to make :

* Preheat the oven to 400 degrees.

* Add salt and pepper to the both sides of the Chicken.

* Place in baking dish, add butter.

* Bake the stuff for 30 min until the Chicken is tender.

* Take out from oven.

* Drain Juice.

* Pour Crumble Chips over Chicken.

* Add tomatoes then spread olives.

* Bake it again for 15 min, until cheese melts.

* Add Cilantro and Sour Cream for topping.

* Enjoy!

Fried Ice Cream

Fried Ice Cream is a dessert coated with raw egg, rolled in cornflakes and cookie crumbs and then deep fried.The extremely low temperature of the ice cream prevents it from melting while being fried. This Mexican Dessert is sprinkled with sugar and cinnamon. Honey and peppermint is also used to give it a different taste.

Fried Ice Cream
All you need:

* 2 flour tortillas, 6 inch each

* 1/2 cup vegetable oil

* 1/2 teaspoon ground cinnamon

* 1/4 cup cornflake crumbs

* 2 tbs. sugar

* 2 maraschino cherries with stems

* 2 large scoops vanilla ice cream

* 1 whipped cream in a can


Toppings:

* honey

* chocolate syrup

* strawberries

How to make:

* Fry each tortila in hot oil until crispy.

* Take a small bowl. Mix sugar and Cinnamon in it.

* On both sides of fried tortillas,sprinkle the mixture.

* Take another bowl, mix half of the Cinnamon mixture with corn flake crumbs and pour it into a wide shallow bowl.

* Place a large scoop of ice cream in the corn flake crumbs and cover the entire surface Make sure it is evenly coated with corn flake crumbs.

* Now place another ice cream scoop on the center of tortilla coated with sugar.

* Spray whipped cream around the base of the ice cream.

* On the top of the ice cream, spray an additional pile of whipped cream.

* Decorate it with cherry.

Black Bean and Rice Enchiladas

Black Bean and Rice Enchiladas
All you need:

* 1 medium onion, chopped

* 1 tablespoon olive oil

* 1 green pepper chopped

* 3 garlic cloves, minced

* 1 can of black beans, rinsed and drained

* 1/4 cup picante sauce

* 1 can diced tomatoes and green chilies

* 1 teaspoon of ground cumin

* 1 tablespoon chili powder

* 2 cups cooked brown rice

* 1/4 teaspoon of crushed red pepper flakes

* 1 cup salsa

* 8 (6 inch) flour tortillas, warmed

* 3 tablespoons chopped fresh cilantro leaves

* 1 cup reduced fat shredded Cheddar cheese


How to make:

* Saute the green pepper, garlic and oil in a large skillet until it tenders.Put tomatoes, picante sauce, beans, cumin , chili powder and red pepper flakes .

* Let it boil, make the heat low , uncover it until the mixture becomes thick.

* Now add rice , cook for 5 min.

* At the center of every tortilla you need to fill a spoon of prepared filling.

* Fold its sides over filling and roll it up.

* Place in a 13-in. x 9-in. x 2-in. baking dish coated with nonstick cooking spray.

* Over each tortilla spoon salsa.

* Cover it and bake at 350 degrees F for 25 minutes.

* Add cheese and cilantro.

* Bake for 2- 3 min, let the cheese melt.

Beefy Tomatoes

A kind of recipe that is eaten in middle of the winters, in beefy tomatoes rice is used mainly to give it very different taste other two main components are ground beef and tomatoes. Its cooking time is 20 min along with 20 min for preparation.

Beefy Tomatoes
All you need:

* 1 pound lean ground beef

* 2 teaspoons dried basil

* 6 medium tomatoes

* 1 medium onion, chopped

* 1/4 teaspoon pepper

* 1/2 cup shredded reduced-fat Cheddar cheese

* 1/2 cup cooked rice

* 1 teaspoon salt

* egg, lightly beaten

* 1/4 teaspoon pepper

How to make:

* Cut the top of tomato discard it and remove the core.

* Scoop out the pulp leaving a 1/2-in. shell. Reserve 1 cup pulp .

* Then invert tomatoes on paper towels to drain.

* Take a nonstick skillet, on medium heat cook beef and onion, meat should not be pink no longer.

* Stir in a basil, pepper, salt and reserved tomato pulp, boil it .

* Reduce the heat, simmer , uncover it for 10 - 12 min.

* Add rice, egg and cheese, add tomato shells.

* Take a shallow 2-qt. baking dish coated with nonstick cooking spray and place the stuff.

* Bake it at 350 degrees for 20-25 minutes.

* Serve
