Beefy Tomatoes

For your perfect delight here is mexican stuff if you want to add more taste and flavour to your day just try Beefy Tomatoes. A kind of recipe that is eaten in middle of the winters, in beefy tomatoes rice is used mainly to give it very different taste other two main components are ground beef and tomatoes. Its cooking time is 20 min along with 20 min for preparation.

Beefy Tomatoes
All you need:

* 1 pound lean ground beef

* 2 teaspoons dried basil

* 6 medium tomatoes

* 1 medium onion, chopped

* 1/4 teaspoon pepper

* 1/2 cup shredded reduced-fat Cheddar cheese

* 1/2 cup cooked rice

* 1 teaspoon salt

* egg, lightly beaten

* 1/4 teaspoon pepper

How to make:

* Cut the top of tomato discard it and remove the core.

* Scoop out the pulp leaving a 1/2-in. shell. Reserve 1 cup pulp .

* Then invert tomatoes on paper towels to drain.

* Take a nonstick skillet, on medium heat cook beef and onion, meat should not be pink no longer.

* Stir in a basil, pepper, salt and reserved tomato pulp, boil it .

* Reduce the heat, simmer , uncover it for 10 - 12 min.

* Add rice, egg and cheese, add tomato shells.

* Take a shallow 2-qt. baking dish coated with nonstick cooking spray and place the stuff.

* Bake it at 350 degrees for 20-25 minutes.

* Serve

* Enjoy!
