Green Onion Burritos

Ingredients:

1 can green chillies properly diced
1 package green onion dip mix or Hidden Valley
Ranch Mexican mix
1 small can pimientos
Flour tortillas
1 pound lean ground beef
1 small onion, finely chopped
8 ounces shredded Longhorn cheese
3/4 cup evaporated milk
1 can cream of chicken soup
4 ounces Velveeta cheese

Green Onion Burritos

Method:

Cook ground beef and onion until they become light golden brown and season to taste. Now spray a baking dish with Pam. Put meat mixture and some longhorn cheese on each tortilla and roll them and place in dish until all mixture is gone.

For the sauce mix soup, evaporated milk and Velveeta over medium to low flame. When cheese melts, remove from heat and add pimientos, green chillies and green onion dip mix. Pour sauce over burritos. If you want to relish the Mexican green onion burritos then cover and bake the yummy dish at 350 degrees F for 20 minutes and serve hot...

Vegetable serving dishes and some fall favorites from Mexicano

Mexican residence cooks make use of many vegetables not often found on Mexican restaurant menus, particularly those north of the border, which often place a heavy emphasis on meat, cheese and beans. But there are several Mexican ways of preparing vegetables that make hearty, satisfying main and side dishes. They are perfect for the cooler weather and changing culinary landscape of autumn, when the chilly dishes and grilled meats of summer are being replaced by comfort foods, either slowly simmered or oven parched.

Seize budín, a vegetable pudding that can be made with several different variations. The word "pudding" is not typically associated with vegetables by non-Spanish speakers, but that is the common translation, finished more confusing by the fact that budín can also mean cake frosting or dessert pudding. A vegetable budín is most often made with corn, peas or carrots and served as a first course, or alongside meat or poultry as a side dish. Since they incorporate eggs and cheese, both significant sources of protein, budínes could easily be used as vegetarian main dishes, accompanied by a soup or rice course.

An additional hearty vegetable dish is the torta, coincidentally another confusing word, since it can mean a bread roll or the sandwich made with it. It can also mean a torte, such as the Spanish-style potato torte. (This last one is called a "tortilla" in Spain, but has nothing to do with the Mexican tortilla, except for the circular shape.) In case this is not confusing enough, torta is also sometimes used to mean a vegetable budín. Most commonly, however, a vegetable torta is made with layers of vegetables, cheese, bread crumbs or corn tortillas and resembles what in English is called a casserole.

And then there are the many stuffed vegetable dishes. The well-known chiles rellenos are most often distended with cheese or picadillo, a meat filling, but are also frequently stuffed with corn or zucchini. Chayote and zucchini are stuffed with other vegetables, such as corn, cheese, mushrooms, or a grouping.

Several Mexican dishes where vegetables serve as fillings for dough. The molotes and quesadillas sold outside the markets in Central Mexico are most often stuffed with non-meat fillings. Here in Cholula, distinctive fillings include squash blossoms, mushrooms, huitlacoche, potatoes and tinga, a tomato filling that, in this case, contains no meat. Empanadas, or pastry turnovers, can also be stuffed with vegetables, and are especially good in cooler weather, when something from the oven is a big hit with hungry diners.

Giving a thought over vegetables that can be served in traditional Mexican sauces, think pipián. Both red and green pipián make wonderful sauces in which to serve vegetables, and give non-meat eaters a chance to try some great regional food without chicken or pork. Using hearty chunks of vegetables, and additional the meal with corn tortillas, makes this one of the most robust meals a vegetarian could wish for. You can serve Almond Seera as a sweet dish

Always bear in your mind above all cream soups. Mexicans make them with nearly every vegetable possible. Mushrooms, corn and poblano chiles are popular choices, as are zucchini, chayote, cauliflower and peas. Soup is most often served as a first course in Mexico, but soups made from black beans or fava beans would make a good lunch or supper, accompanied by a salad and tortillas or bolillos. Noodle soups with greens are also popular, especially in Central Mexico, where acelgas -- Swiss chard -- is copious and inexpensive. Spinach or kale would also be good in this kind of soup.

1) Tripe – what is it?
Within the uncomplicated appearance tripe can be said as stomach (or stomachs) of a domesticated animal. Generally primary three stomachs of a cow are utilized and at times of a pig or sheep stomach can also be used. The initial of the cow’s stomach is the "blanket" tripe, following and most favorite is the "honeycomb" tripe and third usable stomach is the "bible" or "book" tripe. The very last stomach of a cow is infrequently used because of its glandular texture.

2) How is Tripe Prepared? :-

Tripe has been used in almost every country around the world in all kinds of dishes from main dishes to cold salads. In Italy you can enjoy "Trippa alla Fiorentina" in tomato sauce and in Belgium "Tripes a Djotte" a tripe sausage encased in large intestines. Even the well known "Andoille" sausage from France is tripe. In the Southern US it is deep fried in a buttermilk batter.

Mexican Spices

When you think of delicious mexican cuisine, if you happen to enjoy great Mexican food, spices are definitely going to be part of your meal. A good spices by today's standered, is often a spice that is dried and put into the can. Purchasable at your local grocer, that spice is going to offer a flavour similar to the fresh and authentic taste you would except. Infact, many people simply do not know what it is to have the fresh and authentic taste of some of the most delicious flavour in the world.

There are many Mexican food spices available today. The most common are probably chilli powder, cumin and oregano. However, there are many other type of spices available with a long range of benefits and taste.

Oregano grown and harvested in Mexico is absolutely divine.This earthy spice add it earthiness to any meal. Many people may be familiar with Mediterranean oregano which adds immense flavour to the Italian cuisine, but the oregano from mexico is in the class all of its own and no less appreciated.

Cumins just happens to be one of those herbs that have been around since the beginning of time. The origin is believed to be in the middle east, but the reality is no one can know for sure. The bitter taste adds a toasty flavour popular when it is come to the cuisine of Mexico. Cumin is extremely hearty herbs with just a little bit going a long way.

Everyone has heard about chilli powder, and this is a blended mix often considered a staple when it come to n Mexican food spice. This blend of oregano, cumin and chilli can be added to just about anything offering a spicy taste of perfection. Most often, chilli powder is used to spice up meat, but many families love this flavour in vegetable too.

Another spice similar to chilli powder would be Chipotle. What is Chipotle? Chipotle is a dried jalapeno that has also been smoked to perfection. Chipotle is definitely popular, and you will find this spice goes great in many salsa ans sauces. Also, Chipotle is a primary spice found in the marinade Adobo.Of course, not all Mexican food spices are well recognized as chipotle, chilli powder, cumin and oregano.

Epazote is an authentic spice from Mexico that should be used sparingly. In large enough quantities, epazote can be poisonous.However, epazote is also used to flavour beans and it will also the intestinal side effects of alarge dose of delicious bean. Choosing to eat the best in authentic Tex-Mex or Mexican cuisine will often you lead.

Mexican cuisine outside of Mexico

Cuisine of Mexico is a type or style of food as they, originated in Mexico. Few dishes in this cuisine have a Spanish or Middle Eastern influence. This cuisine is known worldwide for its distinct and varied flavours, eye candy type decoration of the dishes, and variety of spices and ingredients used, many of which are native to the country.
This cuisine has generated its own fan following globally.
Authentic Mexican food was adapted and Americanized as "Tex Mex" (Texan-Mexican) cuisine.

Mexican cuisine also posed a strong influence over cuisine of the southwest United States and in California where their version of "Tex-Mex" is sometimes called Cal-Mex.

Nachos
A) “Nachos“ :- are rarely eaten in Mexico, whereas they are widely popular all over the world.
Cuisine-style is what differs the six regions of Mexico, it is like that almost each region has parted country with separate cuisines. .

1) In the Yucatan: - a unique, natural sweetness (instead of spiciness) exists in the widely used local produce along with an unusual love for achiote seasoning.

2) In contrast, the Oaxacan region is known for their savory tamales and celebratory moles, while the mountainous regions of the West (Jalisco, etc) are known for goat birria (goat in a spicy tomato-based sauce).

Margaritas
B) “Margaritas” :- They come in a variety of flavours and colors.

Chimichanga”
C) “Chimichanga” :- A deep-fried burrito with origins in Arizona, is a Mexican-inspired dish popular in the United States and in other countries outside of Mexico

Locating Mexican Restaurants

These restaurants can be found in almost any town throughout North America, and in many cities around the world,
Mexican restaurants in different regions of world have different menus such as:-

1)Restaurants outside the American Southwest often feature non-traditional ingredients, such as grated American-style cheese, "nacho" cheese or tomato-based sauce substitutes for Mexican chile-based sauces or mole.

2)Texas, New Mexico, Arizona, California, Colorado, and parts of Florida and Illinois have large expatriate Mexican populations, and a variety of authentic Mexican restaurants can be found in these states.

3) In other areas of the United States and Canada, Mexican dishes and restaurants vary as much as Chinese restaurants and dishes do between China and many locations in the western Hemisphere.

New Mexico's long tradition of Mexican settlement and history and also the Native American influence as well, has given birth to a unique form of New Mexican cuisine. Even though many of the dishes vary from their Mexican counterparts, they are still considered "authentic" or "traditional" for New Mexican cuisine. Both Mexicans and New Mexicans typically find each other's cuisine somewhat similar, yet unfamiliar, and non-traditional, typically missing the true taste that they desire. Mexican restaurants rarely initiate for specializing in New Mexican cuisine found outside of New Mexico except in the state of Colorado.

Black Bean Tortilla Pie is also very famous appetizer of Mexico and you can serve Cherry Slush along with appetizers as a fruit drink.
